Lactation Cookies
Ingredients
¼ cup flaxseed meal
½ cup water
1/3 cup coconut oil, melted
1 cup coconut sugar
1 teaspoon vanilla extract
1 2/3 cups oat flour
¾ cup old fashioned rolled oats
½ cup almond flour
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
2/3 cup dark chocolate chips, dairy free if desired
Maldon sea salt
Recipe
Preheat oven to 350.
Line a baking sheet with parchment paper.
In a medium bowl, whisk flaxseed meal and water - and let this just sit while you're preparing all of your other ingredients.
After a few minutes, you can add in the coconut sugar, melted coconut oil, and vanilla extract and mix everything well.
Add in the oat flour, rolled oats, almond flour, baking soda, cinnamon and salt.
Add in your chocolate chips.
Scoop the dough onto lined baking pan - we like to do about 9/pan, and you’re good to go.
Bake cookies for 10-12 minutes, after removing sprinkle Maldon sea salt on top.
